Crockpot Lentil Stew

Wow wow wow. The simplest possible thing on earth! Really. I don't lie about this.


It is simply the best feeling on earth to be able to throw together a complete and hearty meal when you're really short of time. By short on time, I mean getting home at 8 from training, and having 3 hours worth of homework to complete in the 2 hours that you have between getting home and sleeping at 10. All that along with having to prepare dinner, bathe and pack for the next day. So fun hm?


That's where this amazing soup comes in. It's really so simple. Just toss everything into the slow cooker or the crockpot and leave it to cook for 6 hours. You could throw it in in the morning and come back home for a great dinner and an amazing smelling house. Or do it at night, fall asleep to the fragrance of the soup and wake up to a gorgeous breakfast like I did.


Praise the inventor of the slow cooker, for he/she has made my life really easy.

Ingredients:
500g green/brown lentils
1 can stewed/crushed/diced tomatoes
2 stalks of celery, diced
1 onion, diced
2 tsp salt
7 cups of water

Method:
Combine everything in the crockpot and cook on low for 6 to 8 hours, or overnight, until lentils are done and soft.
